Cookies and Brownies and Crumble, Oh My!

This weekend, my friend Stephen held a fundraising bake sale and BBQ at Loafers Bar here in Cork City. All money raised goes towards the New Fill Project at St James’ Hospital. The event is part of his role as Mr. Gay Loafers. He competes in Mr. Gay Ireland later this month. Vote for Stephen Spillane here. Loafers has been around for 30 years and a beacon in the LGBT community in Cork and in Ireland, so it seems only fitting to hold a community event for charity here and Stephen is the perfect host with the most.

I baked five items for the fundraiser and am sharing the photos of the results and the recipes here. With you, my favoritest people.

Grandma’s Brownies are gooey chocolate yumminess.

Chocolate Chip Cookies which I made in the same brownie mixing bowl so there was a little extra chocolatey goodness to the batter. Arlene called it my secret ingredient.

Vegan Apricot & Peach Crumble was made with the same recipe I used for my Apple Crumble.

Chocolate Cookies with White Chocolate Chunks which was made from Pioneer Woman’s recipe. You know I love her baking recipes since she inspired my Croissant Dough Monkey Muffins and Croissant Dough Monkey Bread.

    Thanks for the vegan crumble recipe; my food tolerance has changed (again!) and I can’t have sugar or fat. I will have to try the peach / apricot crumble one day.
