Fresh Bell Pepper Salad with Grilled Sausage

Today, on our walk around town we popped in to the English Market to buy some fresh O’Flynn’s Sausages to grill at home for an easy lunch. Two pork-free sausages were available today, the Lamb & Rosemary and the Boerewors, so we bought three of eachThe rest of our lunch plan just came together when I saw the lovely bell peppers at Superfruit. The final plate was a feast for my eyes and my stomach.

The recipe for the Bell Pepper Salad is below. I made it up as I went along so it’s something easy and simple. If you’d like, feel free to play with it. Maybe add quinoa or thinly sliced red onion to make it your own. I prepared it while the sausages were grilling.

Bell Pepper Salad

One red bell pepper
One green bell pepper
One yellow bell pepper
1 tablespoon lemon juice
1 tablespoon red wine vinegar
2 tablespoons extra virgin olive oil
1 tablespoon fresh garlic, minced
2 tablespoons fresh parsley, finely chopped
1/4 teaspoon salt
Freshly ground pepper

1. Coarsely chop the bell peppers and set them in a medium bowl.
2. In a mug or small mixing bowl, blend the lemon juice, vinegar, olive oil, garlic, parsley, salt and pepper. Once mixed, pour over the chopped peppers and stir to coat.
3. Serve chilled alongside grilled bread and sausages or your choice of main course.
