I love sunny side up eggs for breakfast. As I work through a list of basic meals to teach my kids, I thought I’d share them here as well. To kick things off, how about starting your day with sunny side up eggs on avocado toast. Though, I also have a great recipe for a gooey egg sandwich if you prefer.
- Begin by toasting bread to your desired level of crispiness.
- While the bread is toasting, time to cook the egg.
- Heat a non-stick pan over medium heat.
- Add a small amount of butter or oil to the pan, enough to coat the bottom of the pan. You can also cook sunny side up egg with out butter or oil just by using a non-stick pan.
- Crack the egg into the pan and let it cook for about 2-3 minutes or until the whites are set and the yolk is still runny. You can adjust the time of cooking based on your preference of yolk doneness.
- Use a spatula to carefully remove the egg from the pan.
- Serve immediately and season with salt and pepper to taste.
- Once the egg is cooked to your liking, remove it from the pan and set it aside.
- Cut an avocado in half, remove the pit, and scoop out the avocado flesh.
- Spread the avocado onto the toasted bread.
- Place the cooked egg on top of the avocado.
- Season with salt and pepper to taste.
- Serve and enjoy!
