Refreshing Prawn & Watermelon Green Salad

A good summer salad should have a mix of textures, like juicy fruit, crunchy vegetables, and creamy cheese or dressing. Bright and tangy ingredients with fresh herbs like mint or basil add a burst of flavor. You’ll notice the mint in this salad as well as tangy in-season watermelon. This combination is light, refreshing, and hydrating – making it a perfect dish for hot weather.

Prawn & Watermelon Salad

  • 1 lb cooked prawns, peeled and deveined
  • 4 cups cubed watermelon
  • 1 cup blueberries
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Butter or Romaine lettuce
  • Fresh mint leaves for garnish (optional)
  1. In a large bowl, combine the prawns, watermelon, blueberries, and feta cheese.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  3. Pour the dressing over the prawn and fruit mixture and toss to combine.
  4. Taste and adjust seasoning as needed.
  5. Cover and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  6. Before serving, give the salad another gentle toss, adding in the lettuce.
  7. Serve chilled, garnished with fresh mint leaves if desired. Enjoy!
