A good summer salad should have a mix of textures, like juicy fruit, crunchy vegetables, and creamy cheese or dressing. Bright and tangy ingredients with fresh herbs like mint or basil add a burst of flavor. You’ll notice the mint in this salad as well as tangy in-season watermelon. This combination is light, refreshing, and hydrating – making it a perfect dish for hot weather.
Prawn & Watermelon Salad
- 1 lb cooked prawns, peeled and deveined
- 4 cups cubed watermelon
- 1 cup blueberries
- 1/2 cup crumbled feta cheese
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
- Butter or Romaine lettuce
- Fresh mint leaves for garnish (optional)
- In a large bowl, combine the prawns, watermelon, blueberries, and feta cheese.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the prawn and fruit mixture and toss to combine.
- Taste and adjust seasoning as needed.
- Cover and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad another gentle toss, adding in the lettuce.
- Serve chilled, garnished with fresh mint leaves if desired. Enjoy!
