Sometimes I want cake more than I want to bake. We’ve all been there and in those instances I do something crazy…I buy a cake mix. I know, I know, your jaw just dropped. But seriously, mixes are good and easy. Plus, mixes are easier to bake with when my sous chef is helping since it requires fewer items be measured. So, in moments like that when something fun needs to be eaten but not a lot of time needs to be spent in the kitchen, I use a mix. Today, I’m telling you how I hacked, for lack of a better word, a plain vanilla cake mix to make an amazing Pineapple Upside Down Cake!
This is the big secret here…. I replaced the non-oil liquid in the mix instructions with pineapple juice. Boom. That’s it. Also, I put a layer of pineapple on the bottom of the pan, which is kinda what makes the whole concept of Pineapple Upside Down Cake work. Here are photos of the process.
