Tangy Lemon Bars
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar, with a bit extra to sprinkle on top as garnish
- 1/4 teaspoon salt
- 1 cup unsalted butter, chilled and cut into pieces
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup freshly squeezed lemon juice
- Preheat the oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper or lightly grease with butter.
- In a large bowl, whisk together the flour, powdered sugar, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture is crumbly.
- Press the mixture evenly into the bottom of the prepared pan. Bake for 20 minutes, or until the edges are lightly golden brown.
- While the crust is baking, make the lemon filling. In a medium bowl, whisk together the eggs, sugar, flour, baking powder, and salt. Stir in the lemon juice.
- Pour the lemon filling over the hot crust. Bake for an additional 25 minutes, or until the filling is set and no longer jiggly.
- Allow the lemon bars to cool completely in the pan. Once cooled, cut into squares and sprinkle with additional powdered sugar, if desired.
- Serve and enjoy!
