Making Something Close to the Borough Market Grilled Cheese

We’re enjoying the finer parts of London this week with my post on Tuesday about the different things we’ve seen visiting there and now today, we’ll talk about the food.

If you’ve visited Kappacasein in London’s Borough Market, you know they have the best grilled cheese in the world. I make a version of it at home to get me through life between London trips and decided after six years of forgetting to share the recipe, I will do so now because winter is grilled cheese season. Though, spring, summer, and autumn are too. Or if you are in London just go there.

Borough Market Grilled Cheese Sandwich Recipe | EvinOK

Something Close to the Borough Market Grilled Cheese

Ingredients are two sandwiches

1 cup grated sharp aged white cheddar

1/4 cup grated gruyere or Swiss cheese

1/2 teaspoon nutmeg

1 1/2 teaspoons chopped scallions

Half shallot

1 1/2 teaspoons butter for the bread

Four slices sourdough bread, 1-1.5cm thick

  1. Warm your griddle, pan, or oven grill while you prepare.
  2. Mix the two cheeses together and add the scallions.
  3. Lightly butter both sides of each piece of bread then rub it with the halved shallot.
  4. Sprinkle the inside halves of the bread with the pinch of nutmeg. Atop one of those slices, scoop the grated cheese. Cover with the other slice of bread.
  5. Place under your oven broiler/grill, in a panini press, or in a griddle pan to cook for a few minutes. I wish I could be more specific, but it all depends which one you’re using. Generally, it will be about 3 minutes and you want the crusts to just start to get crispy and see the cheese goo out the sides.

Of course, feel free to use a panini press or sandwich grill if you have one instead of an open grill or skillet/pan.

      Hi Evin, I’m in London and went to Borough Market and ate this grilled cheese sandwich. It was seriously the best grilled cheese I’ve ever eaten in my life. Wow! Thanks for the recommendation!!

      Not sure about the pancake idea since these are not made from a batter, but you could use a frying pan like with pancakes and they will be gooey, cheesy, deliciousness on your plate.
