Weekday Breakfasts for Back to School Mornings

School is starting up again and that happens to coincide with when my maternity/parental leave is over and I return to my day job. It has been a memorable summer (and year) with AH joining our family and traveling in the United States to see our family and friends, but now we can settle back into normalcy and routine in a pleasant way.

Admittedly, weekday breakfasts have been my challenge since having kids. Honestly, until I moved to Ireland I rarely if ever missed breakfast. It was my thing. I wake up, I need food. That’s how I function. But then kids happen and there are diapers to change or tears to wipe off cheeks then coffee gets cold and cereal gets soggy then we all race out the door and I am hungry. So, I wanted to plan ahead for this year and compile a list with links to recipes for weekday breakfasts for back to school mornings. And as a blogger, if I make any effort I am most certainly going to figure out a way to use it in a blog post so you can save yourself that same work.

    I have tried many make ahead breakfast ideas (omelette in a mug, protein smoothies, overnight oatmeal with fruit) but I keep coming back to my standby of Greek yogurt, fresh fruit & granola. Then I get tired of that, and just eat a bun or a muffin, which doesn’t fill me for more than a couple hours.

      It is hard to find a nourishing and filling breakfast that can be done within a weekday morning timeframe. But if you find two or three options you love that work for you, at least you have a nice rotation. I love oatmeal, but like to switch up the fruit I add for variety. In college, there was a food truck near HUP that had huge blueberry muffins that they’d slice in half, butter, and grill. Even though it was all carbs, it set me up for several hours.
