My Grandma’s Classic Pound Cake

My Grandma Mary is remembered for many things – too many for one blog post. Just as there is no way to summarise or forget the warmth of her hugs. It is also impossible to forget the comfort her cooking offered. She made even the simplest foods special.

Simple and classic, like her pound cake. Mary’s Pound Cake spares no calories to bring the true taste of pound cake to your kitchen. Did you know that pound cake is called that because it is comprised of four main ingredients, each weighing one pound? Flour, butter, eggs, and sugar are all you need, plus a little extract and seasoning to bring out the sweet flavours. The recipe I’m sharing is almost verbatim from her recipe card and much simpler than my own writing style. Since she only wrote them for herself she didn’t feel the need to include step-by-step instructions. Mary’s Pound Cake

1 cup butter

1 2/3 cups sugar

5 eggs (add each-by-each)

2 cups cake flour

1 teaspoon mace

1 teaspoon vanilla extract

1 teaspoon salt

1. Preheat the oven to 350 degrees.

2. Cream together the butter and sugar. One-by-one add the eggs, while continuing to blend the ingredients using a hand-held or standing mixer. Mix in the flour, mace, vanilla, and salt.

3. Pour the batter into a well-greased and floured loaf or bundt tin. Bake for 40–60 minutes, depending on pan.
