Imitation Crab Salad

Now that I’m a parent and making meals for four of us every day (sometimes twice a day), I think back to the balanced and delicious meals my own mother cooked for us. Honestly, at the time I was used to it. Of course, being the one in the kitchen now makes me marvel at how she managed to serve up creative meals with versatile ingredients on a household budget. I hope to work through her recipes and share them on this blog over time. Firstly, because it will make me happy, but also because they’re good crowd-pleasing recipes you may enjoy. I’ll separately post My Mom’s Recipe Repertoire.

Today’s post will focus on my favourite of her summertime meals, her Imitation Crab Salad.

Imitation Crab Salad

2 tablespoons lemon juice

1/4 teaspoon lemon zest

1/3 cup mayonnaise

1/4 teaspoon salt

3 tablespoons fresh dill leaves

2 stalks of celery, chopped

1 cucumber, chopped

1 pound of imitation crab meat, cut into bite-sized pieces

1. Whisk the lemon juice, zest, and mayonnaise together to blend completely then add the salt and dill.

2. Stir in the celery and cucumber to coat with the dressing.

3. Fold in the imitation crab meat.

4. Cover and refrigerate until ready to serve, but no longer than 24 hours as this tastes best fresh. Serve with crusty baguette slices or atop fresh lettuce greens.

Serving suggestion: If you need to make this spread a bit more to feed a crowd or make a meal of it, toss with al dente shell, farfalle, or elbow macaroni pasta.
